- For a smoother texture, dissolve the sugar in a liquid ingredient from your recipe, such as cream, milk, or butter, before incorporating it into the mixture.
- If your recipe involves melting chocolate with liquid, melt the cacao mass and fat first au bain marie
- Use a food thermometer to ensure you don't overheat the cacao mass (keep below 120°F/49°C)
